We cooked some delicious bicol express this weekend and filmed Americans trying Bicol Express for first time here in Miami Beach. It was a fund day and we were joined by Vicky Justiz and Adela Guerra with their boyfriends Louis and Johnny.
Bicol Express is a popular Filipino dish which was popularized in the district of Malate, Manila but made in traditional Bicolano style. It is a stew made from long chilies, coconut milk, shrimp paste or stockfish, onion, pork, and garlic.

Mike you wanted some tips, here's how we cook lechon in Mindanao.When roasting a whole pig,we stuff the cavity with lots of lemon grass,together wil the usual garlic,onions,black pepper and bay leaves and lots of salt.You can also cook lechon in the oven just like porchetta.Make a roulade of pork belly with the usual garlic, onions,black pepper,bay leaves,the juice of half a lemon and most importantly,a few pounded stalks of lemon grass and roast in the oven at a lowish temperature(160 c) for about 5 hours and voila you got lechon.And to the beautiful Nelly,good job on the Bicol express:-) The next time you could add a pinch of sugar and the juice of half a lemon or lime to the dish for more zing:-).Keep up the great vlog:-)

I'm a native of Bicol so I know what real Bicol Express is. It's actually one of the many dishes of the Bicol region that uses coconut milk as the base, and Bicol Express is one that is made PRIMARILY with hot chili. The pork used to be (Still is in Albay province) water buffalo skin which has been charred and tenderized in the coconut milk. The name Bicol Express happened because one tends to eat it fast and with lots of rice because of its spiciness. It's a real spicy, spicy, spicy dish.

For the Sisig if you really want the Filipino experience, you can use the pig "mask" or the face and the ear (the way it is used to be made) but there a lot of meat substitute you can use, chicken, regular pork meat, tofu, or even fish (Bangus).

You should buy ingredients from asian or chinese stores they have the shrimp paste
Onion, chillies, lemongrass, salt & pepper, bellpepper and rub the skin with vinegar before you lechon it ??
